Thus, it is advisable that when ordering Lechon, pigs anywhere between 17 – 23 kgs is the advisable weight range – as their meat is at its best and the skin is neither too thin nor too thick to crunch on.

Basically, native pigs have more tender meat, and have thicker skins because of 2 major factors — their biological make-up and diet.
