HOW TO KEEP THE LECHON SKIN CRISPY
Wondering how you can retain the crispiness of the Lechon skin? Here’s a short guide on how to do so!
When ordering Lechon, if possible, ask your Lechon supplier about their Lechon packaging. The proper storage of your Lechon in a well ventilated container is paramount in retaining the crispiness of the Lechon skin.
It is best that the Lechon is not stored in an entirely enclosed container. As the heat from the belly of the freshly roasted Lechon produces steam
The persistent contact of steam or any liquid will deteriorate the quality of the Lechon skin. Once this has been the case, there is a high chance that the Lechon skin will become “Makunat” or result to a leathery texture.
Once delivered, it is best you remove the Lechon from its original packaging, if the Lechon is poorly packaged.
It is best that the Lechon is placed in / on a container where the heat and steam from the Lechon’s belly is freely allowed to escape. Thus preventing it from being in constant contact with the Lechon skin.
Consequently, store the Lechon in an area without any direct contact from any electric fans or aircons. If you happen to have heat lamps available, having it placed underneath the heating lamps would be of great help!
And for for those who will be loading their Lechon inside a car, it is best to turn off your airconditioning system and your windows down, while in transit.
As for chopping the Lechon, it is recommended that you separate the skin and meat.
As mentioned, it is the constant contact of the Lechon skin with liquid that renders it to become “Makunat“. As such, separating the Lechon skin from the meat will prevent it from being in constant contact with the heat and juice of the meat.
You may opt to have each placed in their own containers or by placing the skin on top of the meat – once chopping is complete.

- Never have your Lechon packed entirely closed.
- Keep your Lechon skin as dry as possible.
- Separate the Lechon skin from the meat.
